Harvesting is by hand with careful selection before coming into the winery.
All the movement of the must and wine is conducted by gravity with no use of pumps, from reception to final ageing, so as to respect and take care of the grapes.
The wines spend a minimum of 12 months in new and semi-new French-oak casks in which they also undergo the malolactic fermentation. The wine is not fined and is stabilised naturally during the winter months in concrete vats prior to bottling. All the wines receive at least 24 months bottle ageing before release for sale.
