Vintage sheet
2019
A very exclusive white wine made in small quantities from viura grap grown on old vines in the Vallimedio vineyard situated at an altitude of 650 metres in the most north-westerly zone of Cuzcurrita, bordering the province of Burgos.
Vintages produced: 2017 and 2018.
Variety: Viura.
Soil: The vineyard is located on a hilltop made up of a sandstone bedrock wich is typical of an area wich has suffered a lot of weathering. Many of the vine plants live in cracks in the rock, where the soil in the fissures and surrounding the roots is clay-loam.
Viticulture: Bush vines, all over 50 years’ old, cultivated according to organic viticulture practices.
Harvest: 1 October in 20-kilo crates and selected on a sorting table. A complex vintage with a late sprouting than the average of recent years, with a very rainy winter and spring. Summer also started with rain but from the last 2 weeks of July the rains stopped and conditions improved for the ripening of grapes.
Vinification: Cold static débourbage and controlled fermentation at 18-20ºC. Once alcoholic fermentation is complete, the wine is racked into used French-oak casks where it remains for several months with its lees until time for bottling.
Ageing: 8 months in used, 225 and 500 litre, French-oask casks with a fine grain and medium toast, followed by 12 months in the bottle.
Bottling: June 2020 with no prior clarification or fining process.
